When I travel food is something I look forward to experiencing because food can say so much about a culture, peoples values, and the environment. One thing I love about the Temple is that they only serve vegan food. I am a vegan myself and have been for around 2 years, so I was very excited to not have to question what I was eating for once. On my travels I find it difficult to find food that I can eat due to many reasons. For example one of the reasons is that I can’t read or understand certain languages, so finding out what the ingredients are can be challenging. I also find going to restaurants especially hard. This is because I have noticed a lot of people won’t know what the word ‘vegan’ means as they have never encountered it before. So to eat here feels liberating to me, I can eat everything and anything! Maybe that’s why I am putting on weight.

I have noticed so many differences in comparison to English food! Everyday for breakfast, lunch and dinner rice will always be served. In England I would say potatoes are our staple dish but we wont consume it everyday, let alone for all three meals. English food is more varied but blander at the same time. I find the food here at the monastery so delicious! They do a variety of vegetable dishes and they are all seasoned so well. I particularly like the egg plant and potato dish that is sometimes served here, and I also love the okra dish as It tastes especially fresh and bursting with flavour.

I have also noticed that everything here is fried. In England we use a variety of methods but the most common one would be to cook our food in the oven. So this was an unexpected difference that I wouldn’t have even known about if I hadn’t decided to come to china. I was speaking to Nichole about how traditional Chinese medicine was involved in the making of the food. She mentioned that in Chinese medicine eating raw uncooked food is bad for you. I don’t really know ins and outs of why, but I think it’s fascinating as the exact opposite is said from the western perceptive. The west argue that if you eat It raw you keep in most of the nutrition. This is something I would love to look in to more and learn to why the Chinese think this way!

My favourite meal of the day has to be breakfast! They serve a rice porridge with vegetables, a fresh steamed bun on the side with some warm soy milk to drink. I’ve have never experienced rice porridge before so it was a new experience to me, I’m used to having oats with some sweet fruits cut up on top for my breakfast so this is a big change for me. However I find this savoury porridge in the mornings to be very satisfying, and I always end up looking forward to it. The soy milk is one of my favourite things here. I have had soy milk before in England but it pales in comparison to the one here. The milk is thicker here. I wondered about it and I asked the Chef about its “secret recipe”. He informed me that the soy milk is just made from three simple ingredients!  This is so much healthier compared to the soy milk in England consisting of many chemicals. I really love to have it warm, it feels really comforting to drink especially when I am first waking up in the morning and it compliments the fresh bun really well.

Though as good as the food here is, I do admit though that I do get homesick for certain foods from England. I really miss Pizza, Hummus and pasta. But when it comes to leaving I know I am going to miss the food here, especially that soy milk!

I appreciate the fact that not only was the food cooked by the hard working volunteers in kitchen, but the whole process of what we eat here goes right down to growing actually the food themselves. At this monastery they have a farm here, where they are able to grow all their own food making them a self sustainable. It makes it extra special that I know the people farming the land that the food I am eating grows from. The whole process of it is from the dedication that these volunteers show to make sure that everybody is fed and looked after. I find my self feeling grateful when I look down upon my plate. Then I feel proud and humbled for being able to help out with the farming, and being able to participate in something bigger than myself.

It really shows that these people really value others. The farmers and volunteers dedicate their time to make sure that the monks and other volunteers are fed with out expecting anything in return. They value the environment they are working from, making sure they respect it and look after it in a way that isn’t destructive to the land surround this monastery. I know I have already learnt so much to do with farming and cooking here, it’s definitely something I will take away with me. One day I hope to have my own farm and provide for a community in the way that this monastery does. It creates a sense of unity and happiness with the people here.
